Shepherd’s Pie

Is it Shephard’s Pie made with beef mince or does that make it a Cottage Pie? Anyway…

Beef mince (I used a 450g pack of >5% fat)

~200ml Passata 

3tbsp Tomato Purée

Glug balsamic vinegar

Glug Worcestershire sauce

Generous pinch of dried herbs, thyme, and rosemary 

Tbsp chopped garlic

Mug beef stock

~5 potatoes

~1 sweet potato

Tbsp quark

Cheese to top

1) Peel and cube potatoes and set to boil until soft enough to mash

2) Brown mince and garlic (and onion if you’re into that sort of thing – as I’ve said before, I hate onions!)

3) Add tomato purée, passata, herbs, vinegar, and Worcestershire sauce to mince and stir well

4) Add beef stock and simmer for approximately 15-20 mins while you mash the potatoes with the quark

5) Dump the beef mixture into an oven proof dish and top with the mashed potatoe

6) Top with cheese and bake in a medium-hot oven for around 40 mins

Mix it up? Add your favourite veggies to the beef mixture. I added carrots but even pretty well cooked, they required too much chewing from my tender teeth! Peas, swede etc. would also go well.
